- 1 slice gluten-free millet bread or another gluten-free bread or 100% fresh home made wheat bread (if it suits you well)
- Stone-ground mustard
- 1/2 avocado
- 2-3 thin tomato slices
- Cayenne pepper
- Celtic sea salt (optional)
- A handful of mung sprouts
- Toast the bread lightly, and then spread on the mustard.
- Layer the avocado and tomato on top, and sprinkle with cayenne pepper and sea salt to your desired taste. Top with mung sprouts.
